House Made Vanilla Ice Cream

 

500 Grams         Heavy Cream

500 Grams         Milk

7 Ounces           Yolks

250 Grams         Granulated Sugar

1 Each                Vanilla Bean (Split and Scraped)

 

1)  Bring Heavy Cream and Milk to a boil with Vanilla Bean

2)  mix yolks and sugar together with a whisk

3)  Pour a quarter of the hot milk mixture into Yolks and Sugar and stir

4)  Mix the rest of the milk mixture into the yolks and return to heat

5)  Cook on medium flame stirring continuously until mixture thickens slightly, do not allow to boil

6)  Strain into a container over and ice bath, chill completely

7)  Spin according to the directions on your ice cream machine
