2 whole eggs
1 egg white
2 Tbsp 2% shredded mozzarella cheese
1 Tbsp flour
1 tsp baking powder
salt and pepper to taste
your favorite fresh chopped herbs
Preheat a well sprayed waffle iron to HIGH heat.
Whisk everything together in a small bowl, incorporating as much air as possible.
Pour the mixture into the center of the waffle iron (it will spread and puff up ALOT) and cook until most of the steam has escaped and the waffle is crispy. Cool on a wire rack.
