1-pound potatoes, cut into quarters

1 sweet yellow onion, finely chopped
1 teaspoon each of fresh rosemary, oregano and flat leaf parsley, chopped
½ pound cherry tomatoes, cut into quarters
1/3 cup apple cider vinegar
2 tablespoons fresh lemon juice
1/4 cup extra virgin olive oil
