RECIPE: Tuna Poke

Appetizer – Tuna Poke

 

Ingredients:

  • 1 ea     8 oz Ahi Tuna Block
  • 3 tbl     Togarashi Spice Blend
  • ½ tbl    Kosher Salt
  • 2 tbl     Cooking Oil
  • ¼ cup   Medium Diced Red Pepper
  • ¼ cup   Medium Diced Cucumber
  • ¼ cup   Medium Diced Avocado
  • 1 tbl     Scallion Rings
  • 1 tsp    Pickled Ginger, julienne
  • 1 tsp    Lime Juice
  • 3 tbl     Ponzu
  • 4 ea     Wonton Chips
  • 2 ea     Cilantro Sprigs

            Build:

  1. Season the Tuna evenly on all sides with the salt and togarashi spice
  2. Sear the tuna in a cast iron pan over high heat for 30 seconds on all sides
  3. Remove from the pan and allow to cool
  4. Medium dice the tuna
  5. Toss 3 oz diced tuna, pepper, cucumber, scallion, avocado, ginger and ponzu together in a small mixing bowl
  6. Spoon the poke into a chilled salad bowl
  7. Press the wonton chips into the top of the poke and garnish with the cilantro
