RECIPE: Watermelon Gazpacho

8 cup finely diced seedless watermelon

1 medium cucumber

1/2 red bell pepper

1/4 cup chopped basil

1/4 cup chopped parsley

3 tablespoons red- wine vinegar

2 tablespoons minced shallot

2 tablespoons EVOO

salt to taste

juice of one lemon


-Chop up everything and blend in a blender -Salt to taste
