Daily Special: 5Church Lamb Burger

5Church Lamb Burger

1 ea 8oz lamb burger patty

1 ea house made sesame bun, Butter toasted in a pan

1.5 oz secret sauce

2 oz red onion marmalade

2 oz gorgonzola fondue

1 oz baby arugula dressed with lemon vinaigrette

For the lamb burger:

?8 oz. ground beef

8 oz. ground lamb

1 tsp. Worcestershire sauce

1 tsp. fresh ground black pepper

kosher salt to taste

Method: Combine all the ingredients except the salt with gloved hands until well incorporated. Portion the mixture into 2 8oz burgers making sure that they are of even thickness. Season with salt and grill to desired doneness. Let rest for 2-3 minutes before building the burger and serving.

For the red onion marmalade:

1 large red onion, peeled and medium diced

3/4 cup red wine vinegar

1/4 cup red wine ( what ever you like to drink)

1/4 cup sugar

1/4 pound butter, cut into small cubes

salt and pepper to taste

Method: In a stainless steel sauce pot combine all of the ingredients except the butter and bring to a simmer over high heat. Reduce the heat to medium low and reduce until the liquid is almost gone. Remove from the heat and stir in the butter a few cubes at a time until all is incorporated. Season to taste with salt and pepper.

For the Gorgonzola fondue:

1/4 cup heavy cream

6oz Gorgonzola dolce cheese

salt and pepper to taste

Method: warm the cream in a small pan. Add the Gorgonzola a little at a time off the heat until fully incorporated. Move the pan back onto the heat if needed to melt completely. season to taste.?
