Daily Special: Maryland Crab cakes

5Church Maryland Crab cakes

 

4 .lb                     Jumbo Lump Crab                                    

12 slices            White Bread(diced, crust removed)

1 pint                  Liquid pasteurized yolks

1 pint                  Mayo

1.33oz                Old Bay

.75oz                   Parsley

1.25oz                Worcestershire

1oz                      Sriracha

1.25                     Lemon Juice

5oz                      Ritz Crackers

1 tsp                    Pepper

1 tsp                    Salt

8 lbs                    Lump Crab Meat

 

Method

Mix together mayonnaise, parsley, Worcestershire, Sriracha, Lemon Juice, Old Bay, Liquid pasteurized yolks, Salt and Pepper.  Dice the white bread and fold into the wet mix. Let stand for 30 minutes. Individually fold in, lump crab, followed by crushed Ritz Crackers. Lastly, Fold in dd jumbo lump crab, mix gently not breaking up lumps.

Form and bake at 450 degree F oven for 7-9 min till heated through and outside is crispy.
