Daily Special: Pan Roasted Cod

Pan Roasted Cod w/ crispy chickpea cake, cucumber salad, and chilled lemon sauce

Yields: 2 portions

2 each 4-6oz Cod loins

Salt + White Pepper

Crispy Chickpea Cake

20 ounces milk

5 ounces chickpea flour (sifted)

2 ounces unsalted butter

Salt + Black Pepper

¼ Cup Extra Virgin Olive Oil (EVOO)

Chilled Lemon Sauce

4 each Lemons (juice)/ Peel 1st

1 Tablespoon Granulated Sugar

¼ teaspoon Tabasco

1 each Egg yolk

1 ½ teaspoon salt

¼ teaspoon white pepper

½ Cup EVOO

½ Cup Blended Oil

Cucumber Salad

2 each Cucumbers (peeled) (long ribbons)

1 each Roasted Red Peppers

½ jar Peppadew Peppers (sliced)

¼ Cup sliced Kalamata olives

½ Bunch chopped cilantro

½ Red Onion (julienned)

½ Tablespoon Granulated suger

¼ Teaspoon Chili Flake

¼ Cup Mirin

¼ Cup Rice Wine Vinegar

¼ Cup blended Oil

MOP for Crispy chickpea cake

In a medium sauce pan, bring milk and butter to a simmer then add sifted chickpea flour in a slow stream stirring with a whisk, cook for 15-20 minutes, cooking out the flour taste. Then add salt and pepper, then slowly add EVOO in small batches until absorbed into the mixture. Very quickly on a half or quarter sheet tray spray with pan coating and line with wax paper or parchment paper. Spread the chickpea mixture on the tray, spreading evenly, and chill then portion. Fry at 350 degrees until crispy golden brown or pan sear in shallow oil.

MOP for Chilled Lemon Sauce

Peel all four lemons then juice, in a sauce pan cook lemon peels in boiling water for 7 to 10 minutes or until soft. Shock in ice cold water, then add all ingredients except oils in a blender. Blend ingredients then slowly add oils EVOO last. Season to taste if needed. Strain if needed. Reserve for serving.

MOP for Cucumber Salad

Pickle red onions with ¼ cup lemon juice, sprinkle of granulated sugar and salt, wait 20-30 minutes drain then mix with other items. Shave peeled cucumbers length wise, do the same with roasted red peppers, slice peppadew peppers, slice Kalamata olives, and chopped cilantro. Mix all ingredients together and add liquids to season, taste then season as needed.
