What's Your Dish? April Dunn Makes Vegetarian Taco Soup

April Dunn shares her ridiculously easy meat-free taco soup recipe for Good Day Charlotte's "What's Your Dish?" series. It freezes well, and makes enough to feed the whole family.
 
Ingredients:
 
  • 1 can Pinto Beans (Drained and Rinsed)
  • 1 can Kidney Beans (Drained and Rinsed)
  • 1 can Black Beans (Drained and Rinsed)
  • 1 can Corn (Drained)
  • 2 cans Diced Tomatoes in Juice
  • 1 can Ro*Tel Diced Tomatoes & Green Chilies in juice
  • 1 can Vegetable Broth (or beef or chicken broth)
  • 1 package Hidden Valley Ranch Salad Dressing Seasoning Mix
  • 1 package Taco Seasoning
  • 1 bag Frozen Veggie Crumbles (Morningstar or Quorn brands are good) - you can also use 1-2 pounds of browned hamburger meat, ground chicken or ground turkey if you don't want to make it meatless.
Directions:
 
Put everything in a large crock pot on low for 4-6 hours and enjoy!  You can also cook in a soup pot on the stove on medium for an hour.  Top with anything - Frito chips, sour cream, sliced avocado, shredded cheddar cheese, sliced black olives, fresh tomato, you name it!
