What's Your Dish? Easy Italian dinner

Executive Chef Chris Bateman from Aria Tuscan Grill shows how to make an easy Italian dinner.

Tomato Bruschetta


  • 1.5 lb Diced Roma Tomato
  • .25 each Red Onion, diced
  • .5 Red Bell Pepper, diced
  • 2 Tbsp Green Onion, sliced
  • .5 cup EVOO
  • .25 cup White Wine Vinegar
  • Salt&Pepper


  1. Mix. 
  2. Toast a thick slice of rustic bread with oil and top with tomato mixture.

Chicken Parmesan

  • 2 Chicken Breasts, 4 oz each, butterflied
  • Flour as needed
  • 4 ea Eggs, whisked
  • Panko Breadcrumbs, as needed
  • 1 cup Tomato Sauce
  • Grated Parmesan
  • Basil


  1. Dip the chicken cutlets into flour, egg, then panko. 
  2. Heat some oil in a pan large enough to fit the breasts and fry on both sides until golden and cooked through.
