What's Your Dish? Grilled chicken superfood salad

Chef Rashaune Davis from Firebirds shows how to make grilled chicken superfood salad.
 
Ingredients:
  • 6 oz. - Grapefruit Greek Yogurt Vinaigrette 
  • 8 Cups - Kale Salad Mix
  • 1 Cup - Barley, cooked as directed
  • 2/3 Cup - Grape Tomatoes, halved
  • ½ Cup - Goat Cheese Crumbles
  • ½ Cup - Craisins
  • 1 Cup - Roasted sliced almonds
  • 2 - 6 oz. Grilled Chicken Breasts
Directions:
  1. Preheat grill to medium high heat, place seasoning chicken breasts on grill.  
  2. Cook over direct heat for 5-6 minutes per side.
  3. Meanwhile, place the dressing in the bottom of a large mixing bowl and the rest of the ingredients mix well.  
  4. Place on a large chilled plate and top with grilled chicken.
