Rooster’s Grits and Bacon

Serves 4

Ingredients

            1 ½ C                 Whole Milk

            1C                   Chicken Stock

            ½ C                 Heavy Cream

            ½ C                 Water

            1C                   Anson Mills Grits

            T.T.                 Salt and Pepper

            1/2C              Bacon

            1/2C              Corn

            2T                  Butter

            *T.T.= To Taste

Method of Preparation:

Add all liquids to your pot and bring to a simmer (≈190-200°).  Whisk in the grits, making sure not to form any lumps.  Meanwhile, dice bacon and render off in a sauté pan.  Strain the bacon and reserve the fat.  Sauté corn in the bacon fat and combine with the bacon.  Once the grits begin to release their starch, combine the bacon, corn and bacon fat and stir constantly.  Once the grits have lost their “bite”, whisk in your butter.  Season to taste.

Summer Arugula Salad

Yield: 2 Entrees 

Ingredients

7oz.                 Arugula

4oz.                 Strawberries

4oz.                 Mango

3oz.                 Goat Cheese

T.T.                  Honey

Pickled Red Onions

½ ea.               Red onion, sliced thin

1C                    Red Wine Vinegar

1C                    Granulated Sugar


In a small pot, combine sugar and vinegar on high heat until dissolved.  In a heat-safe container, pour the solution over the red onion.  The onions are done once the liquid has naturally cooled to room temperature. 

Dressing

3T                   Sesame Oil

1T                   Balsamic Vinegar

1tsp.                Soy Sauce

1T                   Seasoned Rice Wine Vinegar

T.T.                  Salt and Pepper

1T                   E.V.O.O

In a medium bowl, combine vinegars and soy sauce.  While whisking, slowly drizzle in the sesame and olive oil.  Season to taste. 

Alternative Method: Combine all liquids in a container with a tight-fitting lid.  Shake vigorously for 20 seconds, or until smooth.  Season to taste.=

Method of Preparation:

In a large bowl, mix fruit with honey.  Add the arugula, pickled red onions, and dressing (as needed).  Toss with tongs until evenly dispersed and incorporated.  Garnish with goat cheese.   Enjoy!
