Cheddar biscuits

Flour 480g

Baking powder 26g

Salt 6 g

Butter 124g

Cheddar 200g

Buttermilk ½ liter

 

Combine flour, baking powder and salt, chop butter in small pieces and add to flour

Mix in cheese

Slowly incorporate buttermilk a little at a time. May need a little more or less than recipe calls for

Scoop onto baking sheet about 3 inches apart

Bake at 350 for 15-20 minutes until golden brown

Brush with butter and serve warm

 

 

Cinnamon rolls

Brioche dough

Whole milk 1.5 cups

Yeast 1.5 TBSP

Eggs 6

Flour 1395 g

Sugar 1 c

Salt 1 TBSP

Butter 12 oz

 

Combine whole milk and eggs in mixer with paddle attachment

Add in sugar and salt. Mix until combined

Add in flour and yeast. Mix until combined

Turn on speed 2, slowly incorporate butter

Mix until butter is combined

Mix 3 minutes longer

Let rest covered room temperature for 30 min

Refrigerate over night

Roll next morning

 

Filling

Cinnamon 2 T

Brown Sugar 1 C

Sugar 1 C

 

Rub sugars and cinnamon together until combined

 

Icing

Cream cheese 1 LB

Powdered sugar 1 LB 12 oz

Milk 1/3 cup

Vanilla 1 t

 

Cream together cream cheese and powdered sugar scraping well

Add in vanilla and milk

Mix until combined

 

Assembly

Roll brioche dough to about ½ and inch

Smear with butter

Sprinkle on cinnamon sugar mixture

Roll into log

Slice about an inch thick

 

Bake on baking sheet @300 for 10-12 minutes until lightly browned

Let cool slightly then ice with cream cheese icing
