Sunflour Baking Company makes lemon tarts.

Lemon Curd

Ingredients:

  • 4 lemons zested and juiced
  • 150 g butter
  • 1 1/4 cups sugar
  • 4 eggs 
  • 2 egg yolks

Directions:

  1. Heat lemon juice with half of sugar
  2. Whisk together other half of sugar and eggs + yolks
  3. Temper (slowly pour heated juice into egg mixture while stirring constantly) 
  4. Return mixture back to medium heat, stir constantly until thickens and costs back of spoon
  5. Stir in butter, until combined, let cool

 

Sugar dough

 

Ingredients:

  • 195 g flour
  • Pinch salt
  • 113 g butter
  • 50 g sugar
  • 1 egg

Directions:

  1. Cream butter and sugar, add egg
  2. Scrape bowl, add flour and salt
  3. Chill 1 hour, then roll to 1/4 inch thick

Italian meringue

Ingredients:

  • 1 cup sugar
  • Half cup water
  • 4 whites
  • 1/2 t cream of tartar

Directions:

  1. Cook sugar and water to 235 degrees F
  2. whip egg whites and cream of tartar in mixer until frothy
  3. Pour sugar syrup slowly into mixer on medium high speed
  4. Whip until medium stiff speed
  5. Fill rolled dough into molds
  6. Par bake @325 for 10 min or until golden 
  7. Fill with curd
  8. Pipe meringue onto tarts,
  9. Torch
