What's Your Dish? Venison Sliders & Chipotle Ketchup

Scott & Joey from Linwell Farms share their twist on a tailgate classic: Venison sliders with chipotle ketchup.
 
Chipotle Ketchup Ingredients:
  •      1 T olive oil
  •      2 garlic cloves, minced
  •      2 t sweet onion, minced
  •      Dash of dry white wine
  •      1/4 c. dark brown sugar
  •      1/4 c apple cider vinegar
  •      3-4 chipotle peppers in adobo sauce
  •      6 sun dried tomatoes
  •      16 oz crushed tomatoes
  •      Salt and pepper to taste
Directions:
  1. Add olive oil to medium pan on medium/high heat.
  2. Stir in garlic, onion and celery; saute until fragrant, about 2 minutes.
  3. Add wine and stir until liquid reduces, about 5 minutes.
  4. Add brown sugar, apple cider vinegar, chipotle peppers and sun dried tomatoes.
  5. Reduce heat to medium. Let simmer until sauce starts to thicken, 8-10 minutes.
  6. Add salt and pepper, blend until smooth.
  7. Allow sauce to cool before serving. 
 
Venison Sliders Ingredients:
  •      1 pound of ground venison
  •      1/4 cup of finely chopped onions
  •      1/4 cup of finely chopped celery
  •      1 tablespoon of butter
  •      1 tablespoon of olive oil
Directions:
  1. Melt the butter and olive oil in a saucepan - add the onions and celery and simmer for about 5 minutes. Let cool.
  2. Mix in with the ground venison - add salt and pepper to taste.
  3. Pat into small palm-sized patties.
  4. Grill or pan fry.
  5. Serve on dinner rolls with chipotle ketchup and dill pickles.
