Daily Special: Turkey


-1 Gallon water

-2 Cups Kosher salt

-1 Cup brown sugar

-1 Cup cider vinegar

-3 Bay leaves

-2 Tbs black peppercorn

-4 sprigs rosemary

-2 quart ice



-Bring all ingredients (except for ice) to a boil, whisking vigorously.

-Add ice to cool

-Add breasts after brine has cooled


Part 2: Braised legs, thighs and wings


-2 Onions

-5 Celery stalks

-4 Carrots

-6 Cloves of Garlic

-8 Sprigs of thyme

-3 Quarts chicken stock

-1 Cup white wine

-2 Tbs blended oil



-Cut onions, carrots and celery in large chunks

-In a large sautee pan, brown legs thighs and wings in blended oil

-When the turkey is well browned add all the vegetables and continue to brown

-Deglaze with white wine and cook down until nearly all the liquid is evaporated

-Add chicken stock and braise uncovered at 250 degrees for 4 hours.
