Grilled Chicken Superfood Salad


6 oz. - Grapefruit Greek Yogurt Vinaigrette (We make ours fresh but you can use your favorite store bought version)

8 Cups – Kale Salad Mix

1 Cup – Barley, cooked as directed

2/3 Cup – Grape Tomatoes, halved

½ Cup – Goat Cheese Crumbles

½ Cup – Craisins

1 Cup – Roasted sliced almonds

2 – 6 oz. Grilled Chicken Breasts


Pre heat grill to medium high heat, place seasoning chicken breasts on grill.  Cook over direct heat for 5-6 minutes per side. Meanwhile, place the dressing in the bottom of a large mixing bowl and the rest of the ingredients mix well.  Place on a large chilled plate and top with grilled chicken.  Serve with a chilled salad fork and enjoy!
