Maple Pecan Protein Waffles

1 scoop fine vanilla protein powder
1/4 Cup coconut flour
1/4 Cup quick oats
1/2 tsp baking powder
generous dash of cinnamon
3 egg whites
3 oz unsweetened applesauce
2 Tbsp pure orange juice
1 Tbsp pure maple syrup
1 oz toasted pecans, chopped

In a small bowl, combine powder through cinnamon. In a separate bowl, whisk to combine egg whites through maple syrup.

Pour liquid ingredients into dry and stir to thoroughly combine.

Fold in the nuts.

Cook in a waffle iron preheated to med-high heat until most of the steam stops, or until waffle is nice and crispy.

Allow to cool on a wire rack.

Freezes great! Microwave or pop in a toaster to reheat from frozen.
