RECIPE: At Home Mussles and At Home Crab Dip

P.E.I. Mussels, Washed    1    Pound
Garlic, Minced    1    TBSP
Shallot, Minced    2    TBSP
Diced Tomato    1    Cup
White Wine    1    Cup
Red Pepper Flake    1    TSP
Salt    1    TSP
Butter, Room temp    1    Stick
EVOO    ¼    Cup
Chopped parsley    1    TBSP

1.    Place a large sauté pan over medium high heat
2.    Once the pan is hot add the EVOO, shallots, garlic, salt, and red pepper flakes
3.    Sweat everything down for 1-2 minutes or until shallots and garlic and softened
4.    Add the mussels and steam for 2-3 minutes
5.    Add the tomatoes with the mussels and cook for 3-4 minutes (you can use tomato sauce if you'd like)
6.    Deglaze the pan with the white wine and reduce down by half
7.    Add in the butter and stir until butter is melted and incorporated well. Finish with the chopped parsley and serve with crusty bread

Cream Cheese, Room Temp    1.5    Pound
Tarragon, chopped    1    TBSP
Parsley, chopped    2    TBSP
Meyer Lemon Juice    1/3    Cup
Smoked Paprika    1    TSP
Salt    1    TBSP
Ground Black Pepper    2    TSP
Sour Cream    ½    Cup
Shredded Cheddar    1    Cup
Diced Roasted Red Peppers    2    Cup
Texas Pete Hot Sauce    2    TBSP
Worcestershire    1    TSP
Soy Sauce    1    TSP
Crushed butter crackers    1    Cup


1.    In a mixer with the paddle attachment start mixing the cream cheese on low speed. Mix 2-3 minutes or until cream cheese is smooth and soft
2.    Add the tarragon, parsley, meyer lemon juice (you can use normal lemon juice), smoked paprika, salt, pepper, sour cream, hot sauce, Worcestershire, and soy sauce
3.    Strain any excess liquid off of the roasted red peppers (you can roast your own, but canned work just as well)
4.    Add the peppers and cheddar cheese to the cream cheese mix
5.    Remove the bowl from the mixer and fold in the crab meat into it using a rubber spatula
6.    Place mixture into an oven proof baking dish and bake at 350 degrees until the mixture is hot through out and bubbly on the edges (about 8-10 minutes depending on your dish. It may take longer)
7.    Cover the crab dip with the crushed crackers and bake for an additional 4 minutes
8.    Serve with crackers or sliced veggies
