The Daily Special: Pimento Cheese and Bacon Jam

Pimento Cheese recipe

2 Cups Grated Cheddar

6 Oz Cream Cheese Softened

.5 Cup Dukes Mayo

3 oz Diced Pimentos

1 Ts Garlic Powder

1 Ts Lemon Juice

1 Ts Paprika

1 Roasted Jalapeno De seeded

In a mixer whip the cream cheese then add remaining ingredients and mix for 1 minute.

Bacon Jam

1 # Unsliced Bacon Slab

1/2 Yellow Small Diced

1/2 Cup Brown Sugar

2 Tbl Burbon

2 Tbl Coffee

1/4 Cup of Maple Syrup

Render Bacon Drain Fat and add Yellow Onion. Sweat yellow onion on low heat for 5 to 6 minutes until translucent then add remaining ingredients set on summer on low heat for another 5 to 6 minutes until thickened. Remove from pan and cool on sheet pan . And reserve for spreading on sandwich.
